- Minimum 5 years experience in high quality Japanese restaurant
- Strong knowledge of Japanese ingredients and the ability to present dishes in an authentic Japanese style
- Expert in cutting, slicing and filleting of fish
- Must have extensive understanding of different sushi preparations, such as Nigiri, Sashimi, Maki, Urumaki and Temaki
